After I lost my weight using intermittent fasting and keto, for health reasons I began looking at the Mediterranean diet. I confess I was very ignorant about what that diet was. My understanding was that it was basically Italian food, and I couldn’t understand how people lost weight with such a high carb menu of pastas and breads. As it turns out, there are lots of countries around the Mediterranean Sea with a variety of food. And it’s the ingredients and spices that can make it so healthy.
As most people know Pinterest is a good place to find lots of recipes. I found this one particular Arabic salad on Pinterest that I have amended for my needs, most notably for one person in an RV, but I’ll include the original for you.
The first amendment I made was to keep the veggies fresher by not making a complete salad for six but rather one serving just for me. If I cut them all and once they would get soggy very quickly.
When I went shopping for the ingredients, I divided based on the side of English cucumber. It looked like it would make 3 salads for my purpose. I decided to divide that bunches by three and get a Roma tomato for each one. I got a bag of the little sweet peppers rather than a bell pepper for ease of division.
This is what I used:
- One third English cucumber
- One Roma tomato
- 3 to 4 sweet peppers
- One third bunch of radish
- One third bunch of parsley
- One third bunch of green onions
Then I just poured a little olive oil and lemon juice with salt-and-pepper to taste and mixed. This mixture turned out pretty good. One problem I encountered was with my teeth. At the time I had filling that need to be replaced, and so I was careful with my chewing. I had gotten Italian parsley that seemed tough for me to chew. I gave the rest of the bunch of parsley so the chickens.
Since I was making a larger salad that was more like a full meal rather than aside, I decided I tried cutting up some rotisserie chicken after I deleted the Italian parsley. This also turned out well.
